Mediterranean Stack with Hempseed Pesto
This plant powered meal is deliciously light and zesty and so simple to prepare.
Slice and roast 1 eggplant, 1 red capsicum, 4 large field mushrooms, pumpkin.
Stack roast veggies on a bed of baby spinach.
Hemp pesto:
1/2 cup hempseeds
1/4 cup pepitas
1/4 cup cashews
Juice of 1 lemon
Clove garlic
1 cup basil
1 cup rocket or other organic greens
3 tbsps. water to blend (or Cold pressed olive oil)
Pepper and salt to taste
Blend and pour over your masterpiece.
Top with cherry tomatoes and olives.
