Lovely laksa w sweet potato noodles
This incredibly luscious and warming laska can be made in a flash. Its my teenage daughter fav healthy meal and is sure to satisfy. This recipe makes enough for 4.hungry people..
Ingredients:
2 packs of sweet poatato noodles (most health food stores stock them)
Seasonal veg in small pieces like broccoli, carrot, snow peas or green beans, pumpkin, bok choy and capsicum. Substitute any greens you have.
Tofu or green jackfruit
Ginger and garlic minced 1tbsp each
4 tbsp of red curry paste
Few good splashes of tamari
Coconut cream
Wedge of lime and corriander for garnish if you like
Method:
Cook noodles in boiling water for 4 minutes, drain and set aside
lightly fry ginger, garlic, curry paste and tofu or jackfruit together
Throw in veggies, splash of water and tamari to lightly stream-fry for 5 mins
Add coconut cream and a little more water to make soupy
Turn off heat and add noodles. Stir through.
Top with sliced chilli, wedge of lime and corriander or even some dry toasted tamari cashews. Yummm.
