Sweet Potato & Zucchini Fritters with Lemon Herb Sauce
Gluten free, grain free, dairy free and full of flavour! These fritters are a quick, filling and delicious meal for any time of day. Use up any veggies you have in your fridge.
Fritters:
1 zucchini
1 sweet potato
1 cup buckwheat flour
1 tsp cumin
1 clove garlic
Method: (Makes about 8)
Grate veggies, add flour, minced garlic and spice.
Mix well and form into balls.
Fry in a little coconut oil till golden brown on each side.
Sauce:
Blend 1/4 cup tahini, 1/4 cup cashews with 1/4 cup water, juice of half lemon, Himalayan salt, pepper and add a big handful of fresh parsley and thyme.
Serve fritters topped with sauce and salad.
